寿司 / Sushi

„You can't go anywhere without having a sushi bar. I think it's right behind McDonald's.



Yes, sushi is becoming quite popular food in our country nowadays. A year ago, I did not know much about it and hadn’t tried it. But, I can call last year “Sushi revelation” :) Within 2009, I tried sushi, liked it, learned how to make it and delivered a do-it-yourself class.

Let’s start with some basic info. Here is what Wikipedia says about sushi: “In Japanese cuisine, sushi (寿司, , or ) is vinegar rice, usually topped with other ingredients, such as fish.
Sliced raw fish alone is called sashimi, as distinct from sushi. Combined with hand-formed clumps of rice, it is called nigirizushi (にぎり). Sushi served rolled inside or around nori, dried and pressed layer sheets of seaweed) is makizushi (巻き). Toppings stuffed into a small pouch of fried tofu is inarizushi. Toppings served scattered over a bowl of sushi rice is called chirashi-zushi (ちらし).”
 
Essential vocabulary:


Sushi rice – рис для суші

To rinse – полоскати, промивати

Mesh strainer – дрібне сито

Bowl - миска

Rice vinegar – рисовий оцет

Seaweed – морська водорість

Saucepan - каструля

Nori sheet – лист норі

Pickled ginger – консервований імбир

Soy sauce – соєвий соус

Wasabi - васабі

Salmon, tuna, eel etc – лосось, тунець, вугор

Avocado - авокадо

Filling - начинка

The popularity of sushi in North America as well as around the world has resulted in variations of sushi. California roll, which consists of avocado, kani kama (imitation crab stick), and cucumber, often made uramaki (with rice on the outside, nori on the inside), is really popular around the world, but one can rarely come across it in Japan.
